Hyatt Regency Kinabalu’s Oxtail Assam Pedas Recognised by The Malaysia Book of Records

Kota Kinabalu, Sabah (12 November 2025) — For more than four decades, Hyatt Regency Kinabalu’s signature Oxtail Assam Pedas has stood as a timeless symbol of Sabah’s culinary heritage. Today this beloved dish earned national recognition from The Malaysia Book of Records (MBR) as the Longest-Serving Signature Dish in a
Hotel Restaurant, marking a proud moment for the hotel and the community it has served for generations.
First introduced at Tanjung Ria Kitchen, the dish has delighted generations of locals and travellers alike with its bold, tangy broth, tender oxtail, and authentic Sabahan warmth. The recognition highlighted the dish’s enduring popularity and its role in preserving a taste of Sabah’s rich culinary identity.

“This recognition is a tribute to the culinary talent and the community that has grown with us for over forty years,” said Thor Gervasi, General Manager of Hyatt Regency Kinabalu. “Oxtail Assam Pedas has always been more than a menu item — it’s a shared memory for our guests, colleagues, and the people of Sabah, and has
become a cherished part of the state’s culinary culture, bringing together generations of families, travellers, and food enthusiasts from around the world.”

“Our goal has always been consistency with heart,” added Chef Azri, Chef de Partie at Hyatt Regency Kinabalu. “We have honoured the original recipe while refining techniques over the years so that every bowl taste like home.”

An official Malaysia Book of Records certification ceremony was held at the hotel’s lounge, followed by a special showcase featuring Oxtail Assam Pedas-inspired creations — including the popular Oxtail Assam Pedas Puff — and an exclusive dinner reception for invited guests, media, and partners.

Looking ahead, Hyatt Regency Kinabalu will continue to celebrate local flavours through culinary showcases and collaborations that honour Sabah’s diverse food heritage and support the growth of Malaysia’s vibrant dining scene.
